"We also have a fish option which we can sautee," he said. "The jambalaya is gluten-free."
Rue has fine-tuned the spiciness based on patron feedback. For those who like it hot, an array of New Orleans pepper sauces stand at the ready.
"We work together as a culinary team," he said. "I constructed the menu, but the execution was entirely my chef's. My background is in beverage. We really take pride in our cocktail program."
The most popular cocktail is the Hoodoo Smoke, which lives up to its name.
