ST. CHARLES – A brewery has been given the green light to take over the space that previously housed Chord on Blues and River Rockhouse.
Aldermen on May 6 unanimously approved a liquor license for Pollyanna Brewing Company, which plans to locate in part of a building on South Riverside Avenue that previously had housed several businesses, including River Rockhouse and Chord on Blues.
As proposed, Pollyanna would be in the southern half of the building at 106 S. Riverside Ave. in downtown St. Charles. A high-end sports bar called Flagship on the Fox plans to open by the end of May in the building’s northern half.
Pollyanna also has locations in Lemont and Roselle. According to the application to the city, plans are to serve craft beer, hard cider and spirits along with prepackaged finger foods. The establishment also will have live music and trivia events.
Flagship on the Fox owner Steve Mayer, who is originally from St. Charles, also co-owns Flagship Tavern & Grill on Belmont Avenue in Chicago. The restaurant’s menu will include items such as a grilled BBQ salmon sandwich, pepper crusted hanger steak and a variety of burgers. The menu also will include appetizers, soups, salads and wraps.
Flagship places a premium on freshness.
“We try to really not bring in any frozen products,” Mayer previously had said. ‘We don’t like to use our freezer. We like to use fresh. We create most of our sauces. Even our chicken tenders, we don’t bring in a chicken tender that’s already made, we hand cut our chicken tenders from a breast and roll them into buttermilk and do all that stuff. And our burgers I would put on par with anybody’s. We’ve won numerous burger contests in Chicago with our Flagship burger. I’m very confident in our menu and I think people out here will like it.”
One of the partners in the Flagship venture is sports reporter Jarrett Payton, the son of the late Chicago Bears running back Walter Payton.
“Jarrett just moved to Campton Hills and he’s a good friend of mine,” Mayer said. “We have a great team.”
