One great perk of summer is the ability to cook outside on the grill. You may be surprised to learn that in addition to steaks, burgers, chicken, and hot dogs, you can also grill seafood, pizzas, fruits, and vegetables.
One of the keys to a successful BBQ recipe, no matter what you’re grilling, is the seasoning. It’s easy to create your own customized marinades and rubs to add delicious flavor to your creations. To create your own dry rub, combine the following ingredients in a bowl. Start with 1/2 cup brown sugar, then add 3-4 tbsp coarse sea salt, 2-3 tbsp smoked paprika, 3-4 tbsp chili powder, 1 tbsp chopped fresh rosemary, 1 tbsp cumin, 2 tsp ground black pepper, 1 tsp dried thyme, and 1/2 tsp allspice. Add 1 tsp mustard powder, ground chipotle powder, or cayenne pepper for heat. Store in an airtight container between uses. Use on meats, veggies, and even tofu before grilling.
You can also customize your own BBQ sauce for grilling ribs, chicken, and pork. Start with 3 cups ketchup, 2 cups light brown sugar (add 1/4 cup more if you like it sweeter), 1 cup water, and 1/2 cup apple cider vinegar in a saucepan. Add in 2 tbsp each Worcestershire sauce and molasses, and 2-3 tsp salt. Finish by whisking in 1-2 tsp garlic powder, 1-2 tsp onion powder, and 1/2 tsp paprika. Add 1/2 tsp cayenne pepper for heat. Heat until boiling, then simmer, stirring occasionally until thick, for about an hour. Refrigerate in an airtight container.
Another fun BBQ idea is to create customized shish kebabs. Use chunks of chicken, beef, or meaty fish (like swordfish), and alternate with chunks of onion, mushroom, zucchini, bell pepper, and cherry tomatoes.
