Some dads like to be the grillmaster on their special holiday. But regardless of who’s cooking, Father’s Day is a terrific time to gather together to celebrate the dads in your life. Consider trying the following recipes for the big day.
Grilled Chicken Wings: In a medium saucepan, combine 2 cups pineapple juice, 4 tbsp balsamic vinegar, 5 tbsp brown sugar, 4-5 cloves minced garlic, 1 tsp ground allspice, and salt and pepper to taste. Add a diced jalapeno or habanero chili for extra heat if desired. Boil for 2-3 minutes, then let cool. Marinate 36 chicken wings in the mixture for at least 2-3 hours. Grill over medium heat for 15 minutes or until cooked through.
Skirt Steak Fajitas: For the make-ahead marinade, combine 1/2 cup soy sauce, 1/4 cup orange juice, 1/4 cup lime juice, 1/4 cup canola or vegetable oil, the zest from 1-2 oranges, 1/2 cup chopped fresh cilantro, 3 cloves minced garlic, 3 tbsp brown sugar, 1 tbsp chili powder, and 1 tbsp ground cumin. Reserve 1/3 cup of the marinade in a refrigerated container. Marinate 1 1/2 lbs skirt steak in the marinade for 8 hours or overnight. To prepare, toss 1 julienned red bell pepper, 1 julienned green bell pepper, and 1 sliced yellow onion in the reserved marinade. Grill the skirt steak on medium high heat, and add the veggies to a cast iron skillet on the grill. When finished, rest the steak on a cutting board for 10 minutes (under foil), then slice against the grain and transfer to the cast iron skillet, tossing with the veggies. Serve with warm tortillas, pico de gallo, sour cream, guacamole, cheese, and tomatoes.
Banana-Nutella S’mores: Roast marshmallows to desired doneness. Assemble s’mores using Nutella hazelnut/chocolate spread, sliced bananas, and roasted marshmallows in between your favorite graham crackers. Add chopped roasted hazelnuts if desired.
